Mustard Vinaigrette


1 tsp brown mustard
2 TB white wine vinegar
pinch of salt
1 to 1 1/2 tsp small dice, white part, scallions
1/4 cup plus 2 TB extra virgin olive oil.
2 tsp hot water
1/4 tsp sugar


Combine ingredients in a jar, screw on the lid, and shake well to combine.
