Muffins with Basil and Red Bell Pepper

Ingredients:
  • 2 cups flour
  • 2 TB grated Parmesan cheese
  • 1 TB sugar
  • 2 TB fresh basil
  • 1/4 cup diced red bell pepper
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 egg
  • 3/4 cup milk
  • 1/2 cup canola oil
Directions:
  • In a large bowl, combine the flour, cheexe, sugar, basil, red pepper, baking powder and salt.
  • In another bowl whisk the egg, milk and oil.
  • Stir the egg mixture into the dry ingredients until just moistened.
  • Fill greased muffin cups 3/4 full.
  • Bake at 400 degrees for 15-20 minutes or until a toothpick inserted near the center comes out clean.
  • Cool for 5 minutes.
