Ingredients:
- 1/2 LB old bread (or grilled in the broiler, or best of all old and broiled)
- 3 large, ripe tomatoes, diced
- 1 smal cucumber sliced into small rounds
- 1 small red onion thinly sliced
- 10 to 15 basil leaves,shredded
- Salt and Freshly ground black pepper to taste
- 1/3 cup extra-virgin olive oil
- 2 TB red-wine vinegar
- Combine bread, tomatoes, cucumber, onion and basil in a large bowl.
- Season with salt and pepper.
- Add the oil and vinegar and mix well to combine.
- Chill the salad for about an hour before serving.
