Tomato, Bread, and Cucumber Salad


  • 1/2 LB old bread (or grilled in the broiler, or best of all old and broiled)
  • 3 large, ripe tomatoes, diced
  • 1 smal cucumber sliced into small rounds
  • 1 small red onion thinly sliced
  • 10 to 15 basil leaves,shredded
  • Salt and Freshly ground black pepper to taste
  • 1/3 cup extra-virgin olive oil
  • 2 TB red-wine vinegar
  • Combine bread, tomatoes, cucumber, onion and basil in a large bowl.
  • Season with salt and pepper.
  • Add the oil and vinegar and mix well to combine.
  • Chill the salad for about an hour before serving.
