Experimenting with Cheese (my attempt to make Neufchatel)--Day 2 continued . . .

After letting the curds drain for a couple of hours in the colanders, I hung them in the refrigerator.

  2. The bundles have really shrunk over night. It's supposed to end up being a pound to a pound and a half. Afterwords, I'm also supposed to be able to make Ricotta from the whey left behind. So we're probably going to end up with enough cheese to go meatless for several meals this pay period.
